Enchilada Hot Dish

Love enchiladas but don't have time to roll tortillas? Try making a pan of Enchilada Hot Dish with our Enchilada Filling! You can get it in the oven in 5 minutes.

You can top this with enchilada sauce before baking, if you want. I prefer it without the enchilada sauce (so you can taste the Enchilada Filling more).

You'll Need:
1 package Mostly Made Enchilada Filling
6 tortillas that are 6" wide
1 can refried beans (8 oz)
1 cup enchilada sauce (8 oz)
2 cups shredded cheese, like cheddar or Monterey Jack
Your favorite fresh toppings: lettuce, pico de gallo, sour cream, avocado, hot sauce, scallions, etc

Directions:

1. Spray 9"x6" baking dish with cooking spray (to prevent sticking).

2. Layer the hot dish!
a.) Arrange 3 tortillas on the bottom of the pan evenly
     b.) Spread the refried beans
c.) Sprinkle with 1/2 cup cheese
d.) Spread entire pouch of Enchilada Filling
e.) Sprinkle with 1/2 cup cheese
f.) Arrange 3 tortillas to cover the top
     g.) Sprinkle with remaining cheese

4. Cover with aluminum foil and bake at 350° for 25 minutes until hot and bubbly.

5. Serve immediately with your favorite toppings: salsa, guacamole, sour cream, scallions, tomatoes, etc.
