Cheese, creamy refried beans and our Enchilada Filling layered between tortillas for an easy hot dish.
1 package Mostly Made Enchilada Filling
2 tortillas that are 8” in diameter
1 eight-oz can of refried beans
3/4 cup mild or medium salsa
2 cups cheddar or Monterey cheese, shredded
- Preheat oven to 350° and a spread thin layer of salsa in bottom of a 8” pie dish.
- Place 1 tortilla in the pie plate, spread the Enchilada Filling, sprinkle with 1 cup cheese, then spread refried beans. Add the tortilla and pour salsa on top and sprinkle remaining cheese.
- Cover with foil and bake at 350° for 30 minutes until hot, bubbly and cheese is melted.
