Celebrate Taco Tuesday in the most Minnesotan way...Tot-chos!
1 Mostly Made enchilada filling
1 bag Tater Tots (1 lb)
2 cups Monterey Jack cheese, shredded
Your favorite toppings: Pico de gallo, sour cream, salsa, jalepeño, tomatoes, cilantro, green onions
1. Cook Tater Tots according to package directions
2. Heat Mostly Made enchilada filling in a 1-quart sauce pan on medium-low heat until hot and bubbly.
3. Layer cooked tater tots with hot enchilada filling and cheese. Broil for 1 minute to melt the cheese then serve with your favorite toppings.
