Southwest Stuffed Peppers

You’ll need:1 24-ounce package Mostly Made Enchilada Filling4-5 small red, orange or yellow peppers2 cups of cheddar or jack cheeseDirections: Preheat oven to 375°. Cut peppers in half through the stem and remove seeds. Sprinkle cheese in bottom of each pepper. Fill each pepper with Mostly Made enchilada filling and top with cheese. Cover with foil and bake 375° for 30-40 minutes until hot and cheese is melted. Serves 5 people.Prep time: <10 minutesBake time: 30-40 minutes

Classic Lasagna Recipe

During the 2 years I was perfecting my lasagna filling recipe, I made a hundred of pans of lasagna. I experimented with cottage cheese, various pasta sauces and different fresh veggie additions. This classic ricotta version was my favorite.  A big time saving trick is to soak the noodles in hot tap water (instead of boiling them). Shepherd's Pie Recipe

  Add ground meat and top with your go-to potato recipe. I like to use red potatoes because it's easier to leave the skins on, but you could use any potato. You’ll need:1 package Mostly Made Shepherd’s Pie Filling1 pound ground beef, lamb or bison2 pounds yukon gold potatoes (about 5 large potatoes)⅔ cup milk4 Tbsp butter1 ¼ tsp salt Directions: Preheat your oven to 350°. Make the mashed potatoes. Slice potatoes and boil in water until tender, about 15-20 minutes. Add the milk, butter and salt then mash until smooth. Crispy Tortilla Cups

These crispy, fun-sized tortilla cups are my kids' favorite way to eat the Enchilada Filling. They would also be a great appetizer for a party. You’ll need:1 package Mostly Made Enchilada Filling5 eight-inch flour tortillas2 cups shredded cheddarMuffin tin liners (optional, for easier clean-up)Cooking oil spray Directions: Preheat oven to 350°. Place 12 muffin wrappers in the each opening and spritz with inside of each wrapper with cooking oil spray (if desired). Cut each tortilla into 2” strips and then slice in half so that each tortilla yields 8 similarly sized rectangular pieces. You will end up with 40 tortilla strips. Gluten-Free Calzone Recipe

This might be my favorite recipe...at least it's my favorite for now. I use Bob's Red Mill Gluten-Free Pizza Crust mix to keep it GF and because it makes the two crusts so I can feed my family of 4 (and have leftovers).  Mostly Made fillings are gluten-free (each batch is tested to ensure there's no gluten). Just use Gluten-free pizza dough to make these calzones.  You’ll need: 1 package Mostly Made Lasagna FillingPizza dough for two 14" crusts, assembled per package directions2 cups grated mozzarella cheeseDirections: Preheat oven to 400°.
