Shepherd's Pie Cup Cakes from Tasting Kansas City

You'll need:

1 box of Mostly Made Shepard’s Pie Mix

1 lb ground beef

1 can of jumbo biscuits

28 oz mashed potatoes (prepared mashed potatoes of your choosing)
- Preheat oven to 400 degrees

Fill cupcake tin with liners

Open can of biscuits and cut each biscuit round in two (through the middle) so you end up with twice as many thinner biscuit rounds

Press biscuit into the bottom and sides of silicone lined muffin cup

Once oven is preheated bake 6 minutes - if biscuits rise too much to hold meat then press biscuit down immediately after removing from oven

While biscuits cook, prepare prepare mashed potatoes as stated on the package

In a 10" skillet, brown ground beef over medium to high heat - Once browned, add in Mostly Made Shepard’s Pie Mix and simmer until hot

Fill each biscuit with meat mixture

Add one "ice cream scoop” of mashed potatoes on top of biscuit + meat

Place in oven and bake 10 minutes

Broil for 2 minutes to add color and crisp on top
*** Depending on the size of your muffin tin, you might end up with extra Shepherd's Pie Filling and potatoes. I used a ramekin to make a smaller classic Shepherd's Pie and top with remaining mashed potatoes. ***
