Shepherd's Pie with Mashed Sweet Potatoes

Sweet potatoes give our classic recipe a sweet twist.

You’ll need:
1 package Mostly Made Shepherd’s Pie Mix
1 pound ground turkey

Mashed sweet potatoes
3 Tb unsalted butter 
2 Tb heavy cream or milk
3/4 tsp sugar
1/2 tsp table salt
1.5 lbs sweet potatoes (2 or 3 medium) peeled and cut into 1/4" rounds
Ground black pepper

 

Directions:

      1. Preheat oven to 400°.

      2. Prepare the sweet potatoes. Slice sweet potatoes into 1/4-inch rounds. Melt butter in a 4-quart saucepan over low heat. Stir in the cream, sugar, and salt; add the sweet potatoes and cook covered, stirring occasionally until the potatoes fall apart when poked with a fork, around 30 minutes. Off the heat, mash the sweet potatoes in the saucepan with a potato masher.

      3. In 10” oven-safe skillet, brown ground meat over medium heat until no longer pink. Add the Mostly Made Shepherd’s Pie mix and stir to combine. Cook over medium heat until bubbling.

      4. Off heat, smooth mashed sweet potatoes evenly over the top of the shepherd’s pie.

      5. Bake 10 minutes, uncovered, until bubbling around the sides. Broil on high for 1-4 minutes until potatoes crisp.
