Southwest Stuffed Pepper Recipe
1 package Mostly Made Enchilada Filling
4 or 5 small bell peppers (red, orange or yellow)
2 cups of cheddar or jack cheese
- Preheat oven to 375°.
- Cut peppers in half through the stem and remove ribs and seeds.
- Sprinkle cheese in bottom of each pepper.
- Fill each pepper with Mostly Made Filling and top with remaining cheese.
- Cover with foil and bake 375° for 35 minutes until hot and cheese is melted.
